Smoked Salmon Canapes

The holidays are coming.  Here is the perfect recipe to prepare when you have friends coming over and you are short on time.  Now you are ready to have some fun!

Servings:  8

Ingredients:

  • 4 ounces fat free cream cheese, softened
  • 4 teaspoons fresh lemon juice
  • 1 tablespoon drained capers, chopped
  • 4 teaspoons chopped fresh chives
  • 8 slices smoked salmon, each cut into 3 strips
  • 24 slices mini pumpernickel bread (or substitute thick cucumber slices)

Directions:

  1. Combine the cream cheese, lemon juice, capers, and 2 teaspoons of the chives in a small bowl
  2. Spread each slice of bread with 1 teaspoon of the cream cheese mixture, then top with 1 salmon strip
  3. Sprinkle canapes with the remaining 2 teaspoons of chives
