Enjoy this tasty, low fat recipe that will brighten up any holiday table.

Servings: 8 (plus leftovers)

Ingredients:

  • 1 (6 pound) bone-in ready-to-eat ham
  • 1/3 cup packed dark brown sugar
  • 1 (20 ounce) can sliced unsweetened pineapple in juice, drained (reserve 2 tablespoons of juice)
  • 1 tablespoon Dijon mustard
  • 1/8 teaspoon ground cloves (about 30 whole cloves)

Directions:

  1. Preheat the oven to 350 degrees. Line a roasting pan with foil and spray with nonstick spray.  Place a rack in the pan and place the ham on the rack.
  2. To make the glaze, combine the sugar, reserved pineapple juice, mustard, and ground cloves in a bowl
  3. Score the ham with a knife.  Attach the pineaple rings in an attractive pattern, securing them with toothpicks.  Push the whole cloves onto the ends of the toothpicks to decorate.  Brush the ham with half the glaze.
  4. Bake the ham, basting it with the remaining glaze every 15 minutes, until browned and an instant-read thermometer inserted into the center registers 140 degrees, about 10 minutes per pound.  Before slicing, cover the ham with foil and let stand 10 minutes.
