Pan Roasted Brussels Sprouts

Ingredients:

  • 4 teaspoons olive oil
  • 3 (10 ounce) containers fresh Brussels sprouts, trimmed and quartered
  • 1 onion, chopped
  • 6 garlic cloves, sliced
  • 3/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 1/2 cup water
  • 2 teaspoon grated lemon zest

Directions

  1. Heat the oil in a 12 inch nonstick skillet over medium high heat. 
  2. Add the Brussels sprouts and cook, stirring occasionally, until they begin to brown, 5-6 minutes.
  3. Reduce the heat; stir in the onion and garlic.
  4. Cook, stirring occasionally, until the onion is golden, about 10 minutes.
  5. Stir in the salt and pepper.
  6. Add the water and cook, stirring occasionally, until the Brussels sprouts are crisp-tender, about 10 minutes longer.
  7. If there is any remaining cooking liquid, drain and discard.
  8. Remove the skillet from the heat.
  9. Stir in the lemon zest and serve at once.
