Pan Roasted Brussels Sprouts

Ingredients:
- 4 teaspoons olive oil
- 3 (10 ounce) containers fresh Brussels sprouts, trimmed and quartered
- 1 onion, chopped
- 6 garlic cloves, sliced
- 3/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 1/2 cup water
- 2 teaspoon grated lemon zest
Directions
- Heat the oil in a 12 inch nonstick skillet over medium high heat.
- Add the Brussels sprouts and cook, stirring occasionally, until they begin to brown, 5-6 minutes.
- Reduce the heat; stir in the onion and garlic.
- Cook, stirring occasionally, until the onion is golden, about 10 minutes.
- Stir in the salt and pepper.
- Add the water and cook, stirring occasionally, until the Brussels sprouts are crisp-tender, about 10 minutes longer.
- If there is any remaining cooking liquid, drain and discard.
- Remove the skillet from the heat.
- Stir in the lemon zest and serve at once.
