Peppery Popovers

Popovers are puffy mini breads with a crisp brown crust and a tender, moist interior, are said to have gotten their name from the fact that as the batter bakes and expands, it "pops over" the sides of the cup shaped pan.

Servings:  8

Ingredients:

  • 2 large eggs (substitute 1/2 cup of egg beaters or other pasteurized real egg product)
  • 1 cup fat free milk
  • 1 cup all purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper (optional - or substitute another season or low fat cheese)

Directions:

  1. Preheat oven to 450 degrees.
  2. Spray 8 cups of a popover pan or muffin tin with nonstick spray
  3. In a medium bowl, beat the eggs until frothy.
  4. Beat in the milk, then the flour, salt and pepper
  5. Spoon 1/4 cup of the batter into each cup
  6. Bake 15 minutes, reduce the oven temperature to 400 degrees and bake until brown (12 minutes longer)
  7. Serve at once, split the top of each popover the steam to escape, use spray butter or a touch of margarine in each one
