Peppery Popovers
Popovers are puffy mini breads with a crisp brown crust and a tender, moist interior, are said to have gotten their name from the fact that as the batter bakes and expands, it "pops over" the sides of the cup shaped pan.

Ingredients:
- 2 large eggs (substitute 1/2 cup of egg beaters or other pasteurized real egg product)
- 1 cup fat free milk
- 1 cup all purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper (optional - or substitute another season or low fat cheese)
Directions:
- Preheat oven to 450 degrees.
- Spray 8 cups of a popover pan or muffin tin with nonstick spray
- In a medium bowl, beat the eggs until frothy.
- Beat in the milk, then the flour, salt and pepper
- Spoon 1/4 cup of the batter into each cup
- Bake 15 minutes, reduce the oven temperature to 400 degrees and bake until brown (12 minutes longer)
- Serve at once, split the top of each popover the steam to escape, use spray butter or a touch of margarine in each one
